Prepare
Wash the pea shoots and dry them as well as possible. If the stems are long, cut them in half. Mince or smash the garlic.
Quick stir-fry
Heat the pan until clearly hot, then add the oil. Add the garlic and fry just until fragrant; do not let it brown deeply.
Add the pea shoots immediately and stir-fry over high heat for 30–60 seconds. Once they just wilt and turn glossy, season with salt, sugar, and white pepper. Toss quickly and serve at once.
Key Tips
- Dry the pea shoots well or they will release too much water
- Use high heat and a short cooking time; overcooking makes them watery, tough, and dull
- Add salt at the end to reduce water loss
- Do not burn the garlic; bitter garlic will overpower the sweetness of the pea shoots
